Dorito Taco Salad

- 1 pound lean ground beef
- 1 packet (1 oz) taco seasoning
- 1 head iceberg lettuce, chopped into bite-sized pieces
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- ½ cup sliced black olives
- 1 can (15 oz) pinto beans, rinsed and drained
- 1 cup diced fresh tomatoes
- ¼ cup sliced green onions
- 1 cup shredded cheddar cheese

- Sour cream for garnish (optional)
Instructions
- Brown the ground beef in a large skillet over medium-high heat, breaking it into small crumbles with a wooden spoon, until no pink remains. Drain any excess fat.
- Stir in the taco seasoning packet and water. Simmer uncovered over medium-low heat until the sauce thickens and coats the meat, about 5 minutes. Set aside to cool slightly.
- Chop the iceberg lettuce into bite-sized pieces and add to a large serving bowl. Dice the bell peppers, tomatoes, and slice the green onions.
- Add the bell peppers, black olives, pinto beans, tomatoes, green onions, and shredded cheddar cheese to the bowl with the lettuce. Toss to combine.
- Scatter the cooled seasoned ground beef over the top of the salad.
- Lightly crush the Doritos and sprinkle them over the salad. Drizzle the Catalina dressing over everything and toss gently to coat evenly.
- Garnish with a dollop of sour cream and extra green onions. Serve immediately while the Doritos are still crunchy.

Chef Tips
- Add the Doritos and dressing right before serving — this keeps the chips crunchy instead of soggy. If bringing to a potluck, pack them separately and toss at the table.
- Let the seasoned beef cool for 5-10 minutes before adding it to the salad so the lettuce doesn't wilt from the heat.
- Swap Catalina dressing for French dressing or even a creamy salsa ranch if you prefer less sweetness.
- Use ground turkey instead of beef for a lighter version — season it the same way and nobody will know the difference.
- Leftovers without Doritos keep well in the fridge for a day. Just add fresh chips when you reheat and serve the next portion.
Storage
Store leftover dressed salad (without Doritos) in an airtight container in the fridge for up to 1 day. Undressed components keep separately for up to 2 days. Add fresh Doritos when serving leftovers.
